Vegan Chocolate Zucchini Banana Bread

Gooey. Chewy. Healthy. Whaaat!

I actually think this tastes better every day (it somehow gets thicker and even more moist!)

Chocolate Zucchini Banana Bread:

1 1/2 cups flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
4 tbp unsweetened cocoa powder
1 teaspoon cinnamon
2 flax eggs
1/4 cup olive oil
1/3 cup agave nectar
2 ripe  bananas, mashed
1 cup shredded zucchini

Pre-heat oven to 350 F
Make your flax eggs ( 2 tbp ground flaxseed, 6 tbp warm water), whisk and let sit until forms a gel.
Mix all wet ingredients in with your "eggs" and slowly stir in dry ingredients. Fold in shredded zucchini. Spray a 8 x 4 inch pan and pour in the mixture. Bake for about 55 minutes.

After it's cooled down, wrap it in plastic (after eating some of course!). This will keep it super moist.

Pumpkin Gingerbread Vegan Overnight Oats!

I guess i'm just a little anxious for fall to come. I've been making pumpkin smoothies, pumpkin oatmeal, and hearty soups! I am threw with summer!

Pumpking Gingerbread Overnight Oats:

1/3 cup rolled oats
1/4 cup pumpkin
1 tbp chia seeds
2 tsp molsasses
ground ginger
cinnamon
nutmeg
vanilla extract
1 tsp of Agave nectar

Combine all ingredients and leave in the fridge overnight. Next morning, eat with whatever toppings you want (I put on granola)!

Vegan Overnight Oats.





I recently bought some chia seeds from Sunflower Market. I had read a post from Oh she Glows about vegan overnight oats. I had never heard of such a thing! Cold oats just sounded sick, but I decided I should try them anyway. SO GOOD. They looked unappetizing, but they were delicious!

Here's my adaption:

1/3 cup oats
1 cup water
1/2 cup soy milk (I usually use almond milk, but I was out)
1 Tbp chia seeds

Mixed 1/3 cup oats and 2/3 cup  of the water and microwave for 2 min. Then add the other 1/3 cup of water and microwave for another minute. Let sit until it cooled off a litle bit, then add milk and chia seeds and stir. Let sit overnight in the fridge. Next morning, add whatever you want to it!

She orginally mashed up a banana in the mix, but I wanted to taste more oats so I cooked the oats, which you usually don't do.
